Spinach Garlic Meatballs Stuffed with Mozzarella

Ingredients

  • 1 lb ground beef (or ½ beef + ½ pork for richer flavor)
  • 1 cup fresh spinach, finely chopped
  • 3 garlic cloves, minced
  • ¼ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • ½ tsp salt
  • ¼ tsp black pepper
  • Mozzarella cheese, cut into small cubes (for stuffing)
  • 2 tbsp olive oil (for cooking)
  • Optional: Marinara or tomato sauce for serving

Preparation

1. Prep the Cheese
Cut mozzarella into small cubes and freeze for 10–15 minutes to help them hold shape during cooking.

2. Make the Meat Mixture
In a large bowl, combine ground meat, spinach, garlic, breadcrumbs, Parmesan, egg, salt, and pepper. Mix thoroughly.

3. Form the Meatballs
Scoop a spoonful of meat mixture, flatten it slightly, place a frozen mozzarella cube in the center, and shape into a sealed ball. Repeat until done.

4. Sear the Meatballs
Heat olive oil in a skillet over medium heat. Brown meatballs on all sides (6–8 minutes). They don’t need to be fully cooked yet.

5. Bake Until Cooked Through
Preheat oven to 350°F (180°C). Transfer browned meatballs to a baking tray or dish. Bake for 10–15 minutes until fully cooked and cheese is melted inside.
