Slow Cooker Garlic Butter Beef Bites & Potatoes

The kind of comfort food that takes zero effort but delivers maximum flavor. Perfect for chilly nights, busy weekdays, or those evenings when you just want something warm, buttery, and melt-in-your-mouth delicious without hovering over the stove for hours.

Ingredients:

  • 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes
  • 1 tsp salt (plus more to taste)
  • 1 tsp freshly cracked black pepper
  • 1 tbsp garlic powder
  • 4 garlic cloves, minced
  • ½ cup (1 stick) unsalted butter
  • 1 tbsp Worcestershire sauce (optional but highly recommended)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 lb baby potatoes, halved
  • 1 tbsp olive oil
  • Fresh chopped parsley for garnish

Preparation:

Place the beef cubes in a large bowl and toss them with salt, black pepper, and garlic powder. This dry rub gets those flavors started right from the beginning. If you’ve got a few extra minutes (and I do mean just 10), heat olive oil in a skillet and quickly sear the beef for a minute or two per side. Totally optional — but worth it if you want that deeper, caramelized flavor.

Next, transfer the beef (seared or not) into your slow cooker. Toss in the minced garlic, chunks of butter (yes, all of it), Worcestershire sauce, thyme, and rosemary. Give it a little stir to get everything mingling. Then, add the baby potatoes right on top. Sprinkle with a bit more salt and pepper to make sure those potatoes get seasoned too.

Pop the lid on and let your slow cooker do its magic:

  • LOW for 7–8 hours
  • HIGH for 4–5 hours

When it’s done, the beef should be fork-tender and the potatoes will have soaked up all that garlicky, herby, buttery goodness. Right before serving, give everything a gentle toss, taste it, and adjust seasoning if needed. Sprinkle chopped parsley on top for color and a little freshness — and that’s it.

Serve this with a crusty piece of bread to mop up the sauce, or a simple green salad to balance the richness. Or just dig in as is. It’s cozy food at its absolute best.
