No-Bake German Chocolate Pie

This one’s for the days when you want something decadent without turning on the oven. Think creamy chocolate pudding layered into a buttery graham cracker crust, topped with that gooey-sweet coconut pecan frosting we all secretly wish came in a jar. It’s rich, dreamy, and wildly easy to pull off, even if you’re juggling a hundred things or it’s 100 degrees outside. Perfect for holidays, parties, or just because your sweet tooth refuses to wait.

Ingredients (Makes 8–10 servings)

For the Chocolate Pie Layer:

  • 1 (9-inch) pre-made graham cracker crust
(or use a chocolate cookie crust if you want a deeper cocoa flavor)
  • 1 (4-serving size) box of instant chocolate pudding mix
  • 1¾ cups cold milk

For the Coconut-Pecan Topping:

  • ½ cup evaporated milk
  • ½ cup granulated sugar
  • 1 large egg yolk
  • ¼ cup unsalted butter
  • ¾ cup sweetened shredded coconut
  • ½ cup chopped pecans
  • ½ teaspoon vanilla extract

Preparation

Start with the chocolate base — in a bowl, whisk together the pudding mix and cold milk for about 2 minutes until thick and creamy. If you like your pie firmer (especially if it’s going to sit out for a bit), you can use just 1½ cups of milk instead of the full amount. Pour that chocolate goodness into your prepared crust and smooth the top with a spatula. Pop it in the fridge for at least 30 minutes to let it set. You’ll know it’s ready when it doesn’t jiggle like your aunt’s Jell-O mold from 1992.

Now on to that coconut pecan topping — the soul of this dessert. In a small saucepan over medium heat, stir together the evaporated milk, sugar, egg yolk, and butter. Keep it moving — nobody wants scrambled eggs in their pie. It’ll take about 5 to 7 minutes to bubble up and thicken. Once it does, take it off the heat and stir in the coconut, pecans, and vanilla. Let it cool down for about 10–15 minutes. It should be thick and spreadable, but still a little warm so it glides nicely over the pie.

Once your chocolate filling has set and your topping is cooled, spoon that luscious coconut-pecan layer right on top. Gently spread it out until it covers the whole pie, edge to edge. Stick it back in the fridge for at least an hour, or overnight if you’ve got the patience. The longer it chills, the better the texture and flavor come together.

Want to make it fancy? Drizzle with some melted chocolate, toss on a handful of toasted coconut or chopped pecans, or add some chocolate curls if you’re feeling extra. This pie doesn’t need the glam, but it sure doesn’t hurt.

You can absolutely use homemade pudding if that’s your thing—just make sure it’s thick and cooled before layering. And if pecans aren’t your vibe, walnuts work just fine too. No rules here, just chocolate pie bliss.
