Apple Crisp Bites – The Dessert That Feels Like a Warm Hug

Ingredients

Oatmeal Cookie Crust:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • ¾ cup brown sugar
  • 12 tablespoons unsalted butter, softened

Homemade Apple Filling (recommended!):

  • 2 tablespoons butter
  • 3–4 medium apples (peeled, cored, and diced into ¼-inch cubes)
  • ⅓ cup brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

Make the Filling:

  1. In a skillet over medium heat, melt the butter.
  2. Add the diced apples and stir for 2–3 minutes.
  3. Add brown sugar, cinnamon, and a pinch of salt. Stir and cook for 5–7 minutes until apples are soft.
  4. Add the cornstarch mixture and stir continuously until the filling thickens.
  5. Remove from heat and stir in vanilla (if using). Let it cool.

Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, oats, brown sugar, and softened butter until crumbly.
  3. Grease a mini muffin tin generously.
  4. Press a spoonful of the crust mixture into each cup, pressing down and up the sides to form little crusts.

Assemble:

  1. Spoon the cooled apple filling into each crust.
  2. Top with a pinch of leftover crust mixture (optional for extra crunch).
  3. Bake for 15–20 minutes, or until the tops are golden brown.
  4. Let cool completely in the tin before removing to avoid crumbling.
