Leftover Mashed Potato Cheese Puffs – So simple, yet so satisfying

This recipe came to life on a quiet Sunday afternoon when I opened the fridge and saw a bowl of leftover mashed potatoes just sitting there. Normally I might reheat them, or turn them into a quick side, but this time I wanted something different. Something warm, crispy, cheesy — a snack, not a side dish.

So I experimented. I mixed the mashed potatoes with a few pantry staples, added cheese (because when in doubt, always add cheese), and popped them into the oven in a mini muffin tray. The result completely surprised me. Golden on the outside, soft and flavorful on the inside. And not a trace of those leftovers remained.

This has now become a go-to recipe in our kitchen whenever we have leftover mashed potatoes — which, let’s be honest, happens often enough.

Ingredients

  • 3 cups mashed potatoes (cold leftovers work best)
  • 1 cup shredded cheese (cheddar, mozzarella, gouda – whatever you have on hand)
  • ¼ cup all-purpose flour
  • 2 tablespoons grated Parmesan
  • 2 tablespoons chopped chives or green onions
  • Salt and black pepper to taste
  • Optional: 1 egg (helps bind the mixture if the potatoes are very soft)
  • Butter or oil for greasing the muffin tin

Instructions

1. Preheat the oven

Set your oven to 200°C (390°F) and lightly grease a mini muffin tin.

2. Mix the ingredients

In a large mixing bowl, combine the mashed potatoes, shredded cheese, flour, Parmesan, chives, salt and pepper. If the mixture feels too soft or loose, add the optional egg. Mix everything thoroughly.

3. Fill the tray

Spoon the mixture into the muffin cups, filling each about three-quarters full. No need to flatten the tops — a slightly uneven surface gets crispier when baked.

4. Bake

Place the tray in the preheated oven and bake for 20 to 25 minutes, or until the tops are golden brown and slightly crisp.

5. Cool slightly and serve

Let the puffs cool for a few minutes before removing them from the tray. Serve warm. They go well with sour cream, plain yogurt, or a mild dipping sauce.

Leftover puffs can be stored in an airtight container in the fridge for up to three days. To reheat, place them in a hot oven or air fryer for a few minutes. Microwaving works too, though the texture will be softer.

They can also be frozen after baking and reheated directly from frozen.

This recipe isn’t just practical — it turns something ordinary into something surprisingly good. If you’re looking for a way to use up leftovers without repeating a meal, give this a try. It’s flexible, quick, and a real crowd-pleaser.
