There are certain dishes that just feel like a warm hug at the end of a long day. This Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms is one of those meals. It’s rich, hearty, and full of comforting flavors – like something you’d get at a cozy country diner, but made right at home.
This dish is perfect for family dinners, meal prep, or even when you’re hosting guests and want to serve something satisfying yet impressive. It’s one of those meals that looks and tastes like you’ve spent hours in the kitchen, but it’s actually pretty simple to throw together.
Let me walk you through how I make this creamy, cheesy, smoky chicken bake that’s become a weeknight staple in our home.
What makes this recipe a winner? It combines several comfort food champions into one dish:
Each bite is layered with flavor. It’s creamy, savory, just a little spicy, and completely satisfying. Plus, it’s naturally low-carb and gluten-free, so it’s perfect for anyone trying to eat a little lighter without sacrificing indulgence.
Here’s everything that goes into this delicious smothered chicken:
Preheat your oven to 375°F (190°C).
Butter the bottom of a 13×9-inch baking dish (or similar). This helps prevent sticking and adds flavor.
Season the chicken breasts on both sides with salt, lemon pepper seasoning, and a little paprika. Place them flat-side down in the dish.
Bake uncovered for 15–20 minutes, just until they start to cook through. Don’t worry if they’re not fully done — they’ll go back in the oven later.
While the chicken is baking, prepare the spinach. Heat 1 tablespoon of oil in a skillet over medium heat.
Add the fresh spinach and cover for 1–2 minutes, letting it wilt down. Stir occasionally.
Once wilted, remove from heat and stir in the minced garlic and half and half. Bring everything to a gentle boil, then reduce the heat.
Add the shredded mozzarella and stir until melted and creamy. You’ll end up with a luscious creamed spinach sauce. Season with a little salt, and set aside.
In a separate skillet, heat another tablespoon of oil over medium-high heat. Add the sliced mushrooms and sauté for 1–2 minutes, until they start to caramelize.
Don’t add salt at this stage — it’ll draw out moisture and stop them from browning properly. You want golden, flavorful mushrooms here.
Take the chicken out of the oven.
Top each piece with:
Return the dish to the oven and bake uncovered for another 15–20 minutes, or until the chicken is fully cooked (no pink in the center and juices run clear).
For extra golden-bubbly cheese, broil for the last 2–4 minutes. Watch closely so it doesn’t burn.
Got leftovers? Lucky you.
This dish keeps well in the fridge for up to 3 days. Reheat gently in the oven at 300°F, or microwave it in 30-second bursts until warmed through. The flavors are even better the next day.
