Ingredients

For the Graham Cracker Cookies:

  • 1 cup (226g) unsalted butter, softened
  • 1/3 cup (67g) granulated sugar
  • 3/4 cup (150g) packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 tablespoon molasses (optional, for added depth)
  • 1 teaspoon baking soda
  • 1 and 3/4 cups (220g) all-purpose flour
  • 1 cup (120g) crushed graham crackers (approximately 8-10 full sheets)

For the Cheesecake Frosting:

  • 1/2 cup (113g) unsalted butter, softened
  • 1/3 cup (75g) cream cheese, softened (or substitute with additional butter)
  • 3 cups (360g) powdered sugar
  • 4 tablespoons heavy cream (or 2 tablespoons milk)
  • 1 teaspoon vanilla extract

For the Caramel Drizzle:

  • 1 cup (200g) granulated sugar
  • 1/3 cup (80ml) water
  • 3/4 cup (180ml) heavy cream
  • 5 tablespoons (70g) unsalted butter, room temperature
  • 2 teaspoons sea salt

Instructions

Prepare the Graham Cracker Cookies:

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg, vanilla extract, and molasses (if using), mixing well to combine.
  3. In a separate bowl, whisk together the baking soda, all-purpose flour, and crushed graham crackers.
  4. Gradually incorporate the dry ingredients into the butter-sugar mixture, mixing until just combined.
  5. Using a cookie scoop or tablespoon, portion out the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  6. Gently flatten each dough ball slightly with the palm of your hand.
  7. Bake in a preheated oven at 350°F (175°C) for 11-13 minutes, or until the edges are set and lightly golden.
  8. Allow the cookies to cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.

Prepare the Cheesecake Frosting:

  1. In a medium bowl, beat together the softened butter and cream cheese until smooth and creamy.
  2. Gradually add the powdered sugar, mixing well after each addition.
  3. Add the heavy cream (or milk) and vanilla extract, beating until the frosting is light and fluffy.

Prepare the Caramel Drizzle:

  1. In a medium saucepan, combine the granulated sugar and water over medium heat, stirring gently to dissolve the sugar.
  2. Allow the mixture to boil without stirring until it reaches a deep amber color, approximately 10 minutes.
  3. Remove from heat and carefully whisk in the room-temperature butter until fully incorporated.
  4. Slowly add the heavy cream, whisking continuously until smooth.
  5. Stir in the sea salt and let the caramel cool slightly before using.

Assemble the Cookies:

  1. Once the cookies have cooled completely, spread or pipe a generous amount of cheesecake frosting onto each one.
  2. Drizzle the salted caramel sauce over the frosting.
  3. For an extra touch, sprinkle a pinch of flaky sea salt on top of each cookie.

Serve and Enjoy:

  • These cookies are best enjoyed slightly chilled or at room temperature.
  • Store any leftovers in an airtight container in the refrigerator for up to 5 days.

Notes:

  • For a time-saving shortcut, you can use store-bought caramel sauce instead of making it from scratch.
  • Ensure that the butter and cream cheese are at room temperature before making the frosting to achieve a smooth consistency.
  • If you prefer a stronger graham cracker flavor, you can increase the amount of crushed graham crackers in the cookie dough.

These Salted Caramel Cheesecake Cookies are a decadent treat that combines the comforting flavors of graham crackers, creamy cheesecake, and rich caramel. Perfect for special occasions or simply to satisfy your sweet tooth, they are sure to become a favorite in your baking repertoire.
