Savory Baked Chicken with Herb-Roasted Potatoes and Garlic Green Beans

Experience a delightful one-pan meal featuring tender baked chicken, golden herb-roasted potatoes, and crisp garlic-infused green beans. This recipe combines simplicity with rich flavors, making it perfect for both weeknight dinners and special occasions.

Ingredients:

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste

For the potatoes:

  • 1.5 pounds baby Yukon Gold potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

For the green beans:

  • 1 pound fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Season the chicken: In a small bowl, mix together the garlic powder, onion powder, paprika, dried thyme, salt, and pepper. Rub this spice blend evenly over both sides of the chicken breasts. Drizzle 2 tablespoons of olive oil over the chicken to keep it moist during baking.
  3. Prepare the potatoes: In a medium bowl, toss the halved potatoes with 2 tablespoons of olive oil, dried rosemary, dried oregano, salt, and pepper until evenly coated. Spread the potatoes in a single layer on one side of the prepared baking sheet, cut side down.
  4. Prepare the green beans: In another bowl, combine the trimmed green beans with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Toss to coat. Arrange the green beans on the opposite side of the baking sheet.
  5. Assemble the baking sheet: Place the seasoned chicken breasts in the center of the baking sheet between the potatoes and green beans. Ensure that the ingredients are spread out evenly and not overcrowded to allow for proper roasting.
  6. Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender. If desired, broil for an additional 2-3 minutes to achieve a golden-brown finish on the chicken and potatoes.
  7. Serve: Remove from the oven and let rest for 5 minutes before serving. Enjoy your savory baked chicken with herb-roasted potatoes and garlic green beans!

Tips:

  • For added zest, sprinkle freshly grated lemon zest over the green beans before serving.
  • Feel free to substitute the green beans with asparagus or broccoli, adjusting cooking times as necessary.
  • To make this dish even more flavorful, marinate the chicken in the spice blend and olive oil for 30 minutes before baking.

This recipe offers a balanced and nutritious meal with minimal cleanup, as everything is cooked on a single baking sheet. The combination of aromatic herbs and spices ensures a delicious dining experience that will become a household favorite.
