Creamed Chicken and Biscuits Casserole

Creamed Chicken and Biscuits Casserole is a comforting dish that combines tender chicken in a creamy sauce with fluffy biscuits baked to golden perfection. This expanded recipe offers a richer, more detailed version to enhance both flavor and texture.

Ingredients

For the creamed chicken:

  • 2 cups cooked chicken, shredded or diced
  • 1 tablespoon unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste

For the biscuit topping:

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 4 tablespoons cold unsalted butter, cut into small cubes
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup buttermilk
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Prepare the creamed chicken:
    • Preheat your oven to 375°F (190°C).
    • In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until translucent, about 3-4 minutes.
    • Add the minced garlic, sliced mushrooms, and diced carrots. Sauté until the vegetables are tender, approximately 5-6 minutes.
    • Stir in the flour and cook for 1-2 minutes to eliminate the raw flour taste.
    • Gradually whisk in the chicken broth and heavy cream, ensuring a smooth mixture. Bring to a simmer and cook until slightly thickened, about 3 minutes.
    • Add the shredded chicken, frozen peas, frozen corn, dried thyme, salt, and pepper. Mix well and let the filling cook for another 2-3 minutes.
    • Transfer the creamed chicken mixture to a 9×13-inch baking dish, spreading it evenly.
  2. Prepare the biscuit topping:
    • In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and paprika.
    • Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
    • Fold in the shredded cheddar cheese.
    • Pour in the buttermilk and stir until just combined; do not overmix.
  3. Assemble and bake:
    • Drop spoonfuls of the biscuit dough over the creamed chicken filling, covering the surface evenly.
    • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling.
    • Once baked, remove from the oven and let it rest for a few minutes.
    • Garnish with chopped fresh parsley, if desired, before serving.

Additional Tips

  • Vegetable Variations: Feel free to add or substitute vegetables based on your preference, such as green beans or bell peppers.
  • Cheese Options: While cheddar adds a nice sharpness, you can experiment with other cheeses like Monterey Jack or Gruyère for different flavor profiles.
  • Buttermilk Substitute: If you don’t have buttermilk on hand, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 3/4 cup of milk. Let it sit for 5 minutes before using.
